One of the first things I've learned to cook is a whole roasted chicken. It looks really impressive, but is terribly easy. You first rinse your chicken and pour lemon juice all over the inside and the outside then you sprinkle salt and pepper all over the bird. Stuff the bird with a few sprigs of rosemary, some garlic cloves, and a couple of lemons and then bake. The result is a gorgeously brown, juicy bird. Serve with a salad and some veggies and it makes a beautiful meal.
The next day, I stripped most of the leftover meat and make chicken salad. I tried a chunky recipe this time that had grapes and walnuts in it. I served it with croissants. It was a nice change, but not on the top of my chicken salad recipes.
Today the fiancé boiled the chicken carcass and made soup. He added some celery and carrots and a handful of egg noodles. It was a really nice lunch on a cold Saturday afternoon.
I spent $5 on this whole chicken and we have gotten 3 meals out of it with left overs. Not too shabby.
